Healthy Cheesecake Recipe

This base recipe would probably be the one that I get asked for the recipe most often. So for this I decided I would split this recipe into two because really that's how you prepare it anyway, it's a little bit long winded and some of the steps are a bit tedious but it's an incredibly easy recipe, completely customisable and well worth it in the end. So here we go...

Base Ingredients:
- 1c Oats
- 125g Apple Puree
- 2 Tspn Sugar

Method:
- Pre heat your to 180C
- Mix all the ingredients together until well combined
- press into a cake tin (I used a non-stick spring form pan)
- Place in the over for about 10-12 minutes or until lightly browned and the base is a little hard to the touch
- Leave to cool completely

* I also put my base in the freezer for a little while just to make sure its extra cold when I pour the filling on but its not necessary

Cheesecake Filling Ingredients:
- 1c Yoghurt (I always use Vanilla Yoghurt)
- 1/2c Plain Cottage Cheese
- 1 Sachet of any flavour Jelly Crystals you want - on the packet instructions it should make 500ml
- 3 tspn unflavoured Gelatine
- 250ml Boiling Water

Method:
- Place the flavoured and unflavoured Gelatine into a large bowl and pour over the boiling water
- Stir until the crystals have dissolved
- in your blender put in the Yoghurt and Cottage Cheese with a little bit of the dissolved gelatine liquid
- Process until completely smooth
- Pour the Yoghurt mixture into the gelatine and mix thoroughly
- Place the mixture into the freezer and allow to set slightly (this may take up to 30-40 minutes) check and stir it every 10 minutes *this is only necessary if you're using a spring form pan - if you skip this step the filling leaks out of the join
- Pour the filling over the base (check that its not leaking)
- Put in the fridge for at least 3-4 hours to set  **If you need it to set quicker, place it in the freezer and it should be set within an hour

Healthy Carrot Cake/Muffin Recipe

Ingredients:

- 2 Bananas
- 1c Oats - then blended into Oat Flour
- 2 Tspn Sugar
- 2 Egg Whites
- 1c Milk
- Cinnamon
- Vanilla Essence
- Ground Mixed Spice
- Ground Ginger
- 2 tspn Baking Soda

Frosting:

- 2 Tspn PB2
- 150g Vanilla Yoghurt
- Cinnamon

Method:
- Pre heat oven to 180C
- In a big bowl mash the Bananas and add in the Vanilla, Egg Whites and Sugar
- Add spices to taste
- Add into the bowl the Oat Flour and a bit of the Milk
- Gradually add the rest of the Milk (you might not need it all) until you get a cake batter consistency
- Sift in the Baking Soda and stir until its combined with all the other ingredients
- Pour mixture into either a lined or non-stick bread pan or muffin tins
- Bake for 10-20 minutes depending on if you're baking muffins or a loaf and your oven
- They will be done when you insert a skewer in the centre and it comes out clean
- Allow the cake/muffins to cool completely
- Make the frosting and top the muffins or cake with it

Healthy Banana Muffin/Bread Recipe

Ingredients:
- 2 Bananas

- Cinnamon and Vanilla Essence to taste
- 1 tspn Baking Powder

Method:
- Pre heat oven to 180C

So to start off this blog I thought that I would give you some random (unimportant) information on myself so you can get to know me a little better.

1. Winter is my favourite season - though I hate rain

6. I love to make up random recipes - most of the time they work out but there have been a few flops
7. I am currently in my third year at university - studying to be an early childhood teacher

10. After getting my teaching registration (2 years after I finish my degree) I want to study nutrition
11. I loathe exercising - hence why I only do it three times a week
12. I'm the ultimate morning person - normally I'm up by 5am, though I'm a horrible sleeper

14. I like planning assignments, though I hate writing them
15. I have a major sweet tooth - Lunch and Dinner being savoury is more then enough for me in a day
