Healthy Cheesecake Recipe

This base recipe would probably be the one that I get asked for the recipe most often. So for this I decided I would split this recipe into two because really that's how you prepare it anyway, it's a little bit long winded and some of the steps are a bit tedious but it's an incredibly easy recipe, completely customisable and well worth it in the end. So here we go...

Base Ingredients:
- 1c Oats
- 125g Apple Puree
- 2 Tspn Sugar

Method:
- Pre heat your to 180C
- Mix all the ingredients together until well combined
- press into a cake tin (I used a non-stick spring form pan)
- Place in the over for about 10-12 minutes or until lightly browned and the base is a little hard to the touch
- Leave to cool completely

* I also put my base in the freezer for a little while just to make sure its extra cold when I pour the filling on but its not necessary

Cheesecake Filling Ingredients:
- 1c Yoghurt (I always use Vanilla Yoghurt)
- 1/2c Plain Cottage Cheese
- 1 Sachet of any flavour Jelly Crystals you want - on the packet instructions it should make 500ml
- 3 tspn unflavoured Gelatine
- 250ml Boiling Water

Method:
- Place the flavoured and unflavoured Gelatine into a large bowl and pour over the boiling water
- Stir until the crystals have dissolved
- in your blender put in the Yoghurt and Cottage Cheese with a little bit of the dissolved gelatine liquid
- Process until completely smooth
- Pour the Yoghurt mixture into the gelatine and mix thoroughly
- Place the mixture into the freezer and allow to set slightly (this may take up to 30-40 minutes) check and stir it every 10 minutes *this is only necessary if you're using a spring form pan - if you skip this step the filling leaks out of the join
- Pour the filling over the base (check that its not leaking)
- Put in the fridge for at least 3-4 hours to set  **If you need it to set quicker, place it in the freezer and it should be set within an hour
